Following the Battambang Canal north out of town on Street 156 towards
the colorful Ek Phnom Temple, you quickly come to quiet hamlets,
each with their own cottage industry. The first is well-known for their
crepe-like rice paper discs used to make Nime Chow, or spring rolls, this
delicacy attributed to the Cham who migrated west from what is today
Vietnam. The process begins soaking rice over night. In the morning, the
soft rice is ground and then, after adding some salt to the water, hung in
a cloth to let the water drain. From the flour that remains, leaf-thin discs
are shaped on muslin cloth spread over a charcoal fire and then placed
on a bamboo grid-like platform to dry in the sun. A family can produce
between 1500 to 2000 in a day. The rice papers are then sold to other
households, shops and restaurants where the dainty Nime Chow are
prepared and often devoured as soon as they are served.
